First, download the AIC app. This will help you immensely. When going to an AIC accredited restaurant, it takes away a lot of the stress because they have received an accreditation for being able to provide safe gluten free food but, still ask questions to make sure you feel comfortable. However, Italy in general is a celiac’s dream. If you say “io sono celiaca,” which means I have celiac, everyone knows what you are talking about. I live in the United States, and I typically tell restaurants “I have a gluten allergy,” because unfortunately, many people just do not understand what celiac disease is. That being said, if you can learn a little bit of Italian or if you try with Italian, you will be received much better. When I was doing research for our trip, this point was repeatedly noted.  I used Duolingo to learn and I have a chart below that has some short phrases to assist you. The first night in Italy, I was nervous to use my Italian, but I was thrown in when a waiter did not speak much English. When taking our drink order, we struggled, so when he came back, I ordered our dinner in Italian. He then complimented me on my ordering in Italian which gave me lot of confidence to do it the rest of the trip. (Please know I am definitely not fluent, but Duolingo really helped me learn phrases for ordering).
